Other users suggested this, and I appreciate that. Unplugging the camera and plugging it back in resolved the situation! When looking at the 'adjust camera' view, you can see the camera stutter and freeze. Update: It's definitely a camera issue more than VR/tracking. Other apps seem to be working fine some jitter or drift here and there, but absolutely nothing on the scale of Job Simulator. Even stranger, it always loses both controllers simultaneously - like it just forgets to keep tracking for a few seconds. The default view seems pushed forward and jumps forward and back, and the camera keeps losing track of the Move controllers, even when they're held steady in plain sight.

Today, I've been trying to play Job Simulator again, three or four times. I played the Job Simulator demo right after getting my PS VR, and it was wonderful! Grabbing stuff, tossing things from hand to hand, perfect accuracy.
